Who Am I?
I'm an animal loving, vegan eating, wishful thinking, great cooking type of woman! I started my transition to go vegan on February 23, 2013 after watching numerous videos on Netflix that helped me to make my final decision. What really did it for me was the video called "Vegucated". It really helped me to put into perspective of what we actually do to these animals that we eat. I was HORRIFIED!!!! Coming from the Dairy Land of good ole Wisconsin, our diet is all about meat and dairy products. I was raised on a meat and potatoes type of diet, and you better believe I had to drink my glass of milk before leaving the table! Back then we didn’t know any better and that type of diet was considered “healthy”. Although, my parents did raise me, my brother, and my sister to eat plenty of fruits and veggies and absolutely NO sugar cereals! Everything was made from scratch and rarely any boxed foods were allowed. I believe that the way my parents raised me has made me truly appreciate and love my veggies and fruits and has made my vegan transition easier. My family is a bunch of fantastic cooks and because of that I have a very extensive palate. So going vegan I was pretty weary because it had to taste great and look good but was it possible?!?! Sure was and is!
My husband is not fully vegan (I’m working on it!) because yes, he’s a meat loving carnivore but let’s face it…most men are! I can’t and won’t force him to change and I feel that it’s something he has to make the decision about. So, what comes out of my kitchen absolutely needs to tastes good and it has be fulfilling to make a good impression on my husband so that hopefully, someday, he may change his mind (ahhh yes, us wives work in mysterious ways don’t we?). So far, I haven’t heard any complaints from my kitchen and he eats a vegan dinner every night, vegan lunches (except for the occasional days when he has to eat out for lunch), and all vegan snacks. He’s on his own for breakfast during the work week and it usually consists of a bagel and cream cheese or fresh juice from our juicer. I think to be a successful vegan that it all comes down to the recipes! After all, if you’re not feeling satisfied with what you’re eating then it’s a lot harder to stick to it!
